In a recent book published by an American BBQ master, the UK is pretty much bottom of the list of places to get BBQ food. And, to be honest, it's a fair point, given the weather we have most of the time! When the main place to get decent BBQ is The Hard Rock Café, you know there's a problem. The supermarkets selection of spices and sauces are poor at best. So we decided to do something about it. So we started to study......
Barbecue has been around for hundreds of years in one form or another. But early American barbecue has several unique aspects. One was the deliberate and controlled use of smoke (in addition to spice) as a flavouring. Equally characteristic was the use of a pit and a raised grill grate. It wasn't until the turn of the 19th century that the first commercial barbecue eateries started to appear in Kansas. The deep south with its meat packers and stockyards was the centre of America’s premium meat trade and in Kansas Henry Perry, Charles Kreuz, and Harry Green pioneered the barbecue restaurant.
Each region discovered its own style and flavour- from the spicy taste of Texas to the smoky hit of Kansas, the rich sweet flavours of Memphis to the sharp vinegar tang of South Carolina, each was as distinctive as they were stunning. And these wonderful flavours are what we want you to have.
